Amaretto is a sweet Italian liquor that originated in Soranno. The amaretto that we use has, for many years, been regarded as "the" Amaretto of choice - DiSoronno. The combination of apricot kernel oil, burnt sugar and the herbs and fruits they use to make their Amaretto is a great combination with our milk chocolate and almonds.
There are lots of Irish Cream liquors out there, but none that hold a candle to Baileys! We couldn't have a liquor and chocolate combination without this one, and of course in our committment to using the best ingredients that money can buy we make no exceptions here.
The creaminess of our rich white chocolate, real Madagascan vanilla, and real coconut milk make this center a sure-fired hit for coconut enthusiasts! A little bit of dark chocolate to balance the sweetness and add your choice of sweetened or toasted coconut to the outs and you've got a winner for sure.
Asking for a friend here: Who eats the carrot cake just for the cream cheese frosting? While cream cheese frosting is a bit to sweet for a truffle center, we've found the perfect balance. The tartness of the cream cheese and fresh lemon juice combination is awesome with dark chocolate and more dark chocolate on the outside!
We make the best soft cream caramel you can imagine. Why? Well... because we use real cream and real butter as our primary ingredients. While it's still super hot, we carefully pour it into round silicone molds and pop them in the fridge to cool and solidify. A little milk chocolate on the outside and then rolled in some crushed salted pretzels or nuts and.... OMG.....
For those who like the intensity of dark chocolate, this is sure to please. To get the desired intensity we don't actually use dark chocolate. Instead we use pure ground cocoa beans (called liquor) to make these. The beans we use are quite fruity, so even though these truffles pack a punch, they don't impart a dry chalky feel in your mouth like most dark chocolate products do.
Over the years, people have asked us to pair whisky with chocolate. The problem with most hard liquors is that they overpower most everything we pair them with. Drambuie however is a scotch whiskey liqueur that gives us the smokey flavour of whisky, but balances nicely with the chocolate we make. It's also our CEO's go-to for a drink after work so there are generally no left overs!
Espresso and Chocolate... What can we say about this combination, other than it's the perfect marriage. It's also been one of our most popular truffle centers over the years. It pairs fabulously with our cinnamon and nutmeg coating, or any of the varieties of nuts we also coat our truffles with. Almonds and Hazelnuts are winners for sure!
Imagine putting a little chocolate coated cloud of vanilla fluffiness in your mouth and letting it melt. That's the experience our hand made marshmallows will give you. There's a HUGE difference between something flavoured with fresh orange, and something flavoured with orange oil. If you've had fresh squeezed orange juice and Tang, you know what we're talking 'bout! We peel navel oranges and simmer the orange peel with fresh cream, then let it steep overnight before straing the peels out and using the cream. SOOOO Fragrant!!!
Did you know our CEO has OCD? His tireless quest for the right peppermint flavour actually inspired him to grow his own peppermint. Yes, you read that right. We grow our own peppermint, and there's a reason. Fresh peppermint doesn't taste like candy canes or After Eights. It's delicate and balanced and... well... freaking amazing!
Hands down, this is the most popular truffle center we make. There is something about the tartness of fresh raspberries and chocolate that makes it a match made in heaven. Over the years we have simmered and strained 100's of lbs of fresh raspberries to make this center. The only downfall is that it is the quickest center to spoil. Unfortunately if your chocolate needs time to travel, this may not be one of your best choices.

Ferrero move over! Did you know it's almost impossible to find hazelnut butter? Well that's what we mix into our chocolate to make these awesome (and arguably one of our most popular centers) truffles. Let the other guys use Nutella. We buy our hazelnuts and fresh made hazelnut butter from an orchard in Oregon.
You know when you go to a restaurant and see the little chili peppers beside the menu items? Yeah.... Those are for amateurs. Our Hot Diggity center is for people who REALLY like to kick things up a notch. Believe it or not, this goes great with sweetened coconut. We had a special request for this at a large reception, and people were stuffing their pockets with 'em. Who'd have thought?
It almost seems criminal taking a very expensive ice wine and mixing it into a truffle center. ....almost. Our ice wine is actually an ice cider rom an orchard in Eastern Canada. It imparts a very unique apple and wine flavour into our truffle center. We also use a special white chocolate recipe with no vanilla to help bring out the apple flavour. Really cool and absolutely delicious!
"You put da lime in de coconut and drink eet all up!" Well, not really, but then again one can never go wrong with citrus and dark chocolate. Our key lime center uses not the lime, but rather the skin of the lime simmered and steeped in fresh cream - just like we do with our orange centers. No compromise from us = 150% smile activated for you!
Someone told us we couldn't be truly Canadian if we didn't offer something with Maple in it, so here is our Canadiana special! We use real maple syrup, combined with a very special white chocolate recipe to offer this. This is where we shine as a chocolate maker, because vanilla cancels out maple and we can make a chocolate that has no vanilla. This is truly an amazing piece of culinary artwork.

Woop! Woop! This truffle center jumped up, ran over and kicked the Reese's peanut butter cup off the bus and proclaimed its position as king of peanut butter and chocolate. The silky smooth combination of our chocolate and Kraft Peanut Butter (we've tried more than we care to, but theirs is so darned good!), is absolutely amazing!
Pomegranate is a very delicately flavoured fruit, and it takes special care to get right. For this truffle center, we use a very special recipe of white chocolate we make here in house with no vanilla. This is to allow the fruity pomegranate flavour to shine. This is actually a pretty special process, as no other chocolatier in Canada can get white chocolate with no vanilla.
With everyone jumping on the spiced pumpkin bandwagon these days we were feeling a little left out so made our own - except we actually use pumpkin and not just the spices! This is like a little bite of pumpkin pie covered in chocolate. Of course it stands to reason that it goes well with our cinnamon nutmeg coating!

Some people like a SUPER intense chocolate flavour, and our roasted cocoa nibs are the perfect accompaniment for a dark center to give just that. No sugar. No cocoa butter. Just intense roasted cocoa beans. They are both crunchy and intense, and of course roasted fresh here on site from the cocoa beans we use to make our chocolate!
Crispy Patina is just a fancy term for "crunchy coating". Believe it or not, most crispy patina is made from corn flakes! While they don't add flavour to the truffles, they do add a nice crunch. This topping goes great with almost all of our truffle centers - but particularly well with our Key Lime, Coconut Cream, Fresh Orange and Cream Caramel.
When we were creating our brownie recipe, everyone seemed to fight over the crunchy corner pieces. We thought "Hey... Why can't we make this a truffle coating?", so we did, and it's AWESOME!! This works great on ALL of our truffle centers and over the years has become one of our most popular coatings.
"It's beginning to look a lot like Christmas..." Ok... Christmas is over, but the crunchy texture and color of a candycane on the outside of a truffle is still very appealing to many people. ...and why does Christmas have to be just one day? Why can't we have peace on Earth and good will toward others (a woke moment here) all year?
OMG... A S'more truffle!!! Yup. We can do it! Take one of our fresh marshmallow centers, dip it in your choice of chocolate, and then roll it in our house-made graham wafers. Yes, you read that right. We bake our own graham wafers and it makes a HUGE difference. Other great options include our Key Lime (Obviously), Fresh Orange, Pumpkin Spice, and Ginger Snap.

Remember the Nestle Crunch bar? Well now you can build your own version of this with our Milk Chocolate Center, dipped in Milk Chocolate and rolled in Rice Krisps. If you aren't a fan of our "crispy patina" this is another alternative that adds a nice little crunch to your creation.
Sometimes you just have to have dark chocolate dipped in dark chocolate and rolled in more dark chocolate - that's perfectly ok, because our chocolate is just so darned good! This is also a great topping for our Hot Diggity, Drambuie, Espresso and Peanut Butter centers.

Skor bits are awesome salted butter toffee, and add a great crunch to all kinds of centers - dark chocolate, milk chocolate, Amaretto, Drambuie, Peanut Butter, and even our Hot Diggity! Go ahead and try one of our others. We haven't found a bad combination yet.
We use sweetened coconut for a lot of things here at Choklat. It adds texture, sweetness, and of course a nice coconut flavour to things. Try this topping with centers like Dark chocolate, our Coconut Cream center, Raspberry, or Key Lime.
Did you know that most grocery store almonds come from California where they are sprayed with a carcinogen to pasteurize them? True story. Our Almonds don't. We buy raw almonds from overseas and roast them ourselves. They are a great flavour addition to our Espresso, Dark Chocolate, Cream Caramel and Amaretto centers.
Here at Choklat we actually toast our own sweetened coconut. The sugar on the coconut gives it an extra caramel flavour that can't be beat. This topping goes great with our centers like Cream Caramel, Vanilla/White Chocolate, Milk Chocolate, Marshmallow, Key Lime or surprisingly our Hot Diggity.
Mmmm..... The smell of toasted hazelnuts.... That's probably second only to the smell of baking brownies! We purchase our hazelnuts directly from an orchard in Oregon, and do our own roasting and processing right here. Not only does it give us more control over roasting, but also ensures we get them fresh. Try it on our Fresh Orange truffle. Wow!! 'nuff said.
Peanuts are probably one of the most common types of nuts (they really aren't a nut but that's a topic for anther day) to receive stale. Our supplier guarantees the quality and ensures that they are properly shelled. We then roast them to perfection before turning them into a truffle topping.
Pecans are tough to get right. They are very high in fat, and are in general a very delicate nut to work with. However if done right, they add a great toasty crunch to many different ingredients. Again, here at Choklat we roast and crush our own pecans. If you're looking for ideas, this topping goes great with Cream Caramel, Pumpkin Spice, Ginger Snap, and Hot Diggity.
