Our uncompromising dedication to excellence doesn't stop at the chocolate we make right here. You'll taste that same dedication in our confections as well. We own no freezers. We use no commercial "flavorings". There are no "fillers" or food "stabilizers" or "preservatives" to be found anywhere in our facility. We believe in keeping our confections simple, buying the absolute best ingredients, and celebrating their flavors.
In the chocolate and confectionary industry, if they don't use preservatives, chocolatiers are able to create shelf stable confections by increasing the sugar content of the confection center to more than 75%. This changes the ph level and prevents pathogen growth. However, what it also does is make the center of the confection almost unbearably sweet. They then often try to mitigate that sweetness by using a very dark chocolate as the coating. When you first bite into the confection, you get slapped by a mouthful of sugar (yuck), and then as the chocolate melts, you get slapped the other way by the bitter intensity of the dark chocolate. (yuck).
They have to do this, because their chocolates are molded, and often sit on the shelves at room temperature for weeks.

Here at Choklat, we specialize in hand made Truffles - small, balls of chocolate, cream, butter, and a natural flavoring such as raspberries, hazelnuts, or navel oranges. Our truffle centers are portioned out daily and refrigerated until you come in, tell us what you want them dipped in, and what you want them rolled in.
We then make them right there and then for you. Not a minute before.

Making everything fresh "on demand" allows us to carefully balance the flavor, texture, and sugar content of the center, with the chocolate that will coat the truffle. When you bite into one of our truffles you're never going to get an overpowering flavor, sweetness, or bitterness. Your entire experience will be perfectly balanced, and the texture of the center will always be silky smooth - not grainy or crumbly like a high sugar content molded confection.

Made with our 48% Brazilian milk chocolate, fresh cream, fresh unsalted butter, and a small amount of powdered sugar to balance out the addition of the cream and butter.
We start this recipe with pure ground cocoa beans, a small amount of cocoa butter, fresh cream, fresh unsalted butter and a bit of granulated sugar. If you like it REALLY dark, try this dipped in dark chocolate, and then rolled in freshly roasted cocoa nibs.
Technically there's no cream at all in this. We substitute out the cream with 100% natural hazelnut butter, our Brazilian 48% milk chocolate, unsalted butter, and a small amount of powdered sugar. Hedgehog move over. This center dipped in our amazing milk chocolate and then rolled in freshly toasted hazelnuts has been the cause of many weak knees!
Technically there's no cream in this either. We first simmer and reduce fresh raspberries to intensify the flavor. Then we strain out the seeds and leave the pulp and juice. This gets mixed with our Brazilian 48% milk chocolate, unsalted butter, and a small amount of sugar to create the perfectly balanced raspberry center. OMG! It's the perfect tart balance with our dark chocolate. Roll it in some shaved dark chocolate just because you can!
Navel oranges are peeled, and the peels are chopped and simmered with cream. This pulls out the essence oils from the peel and infuses the cream with a natural orange. Our staff press the oranges, and drink the juice (too much water in the juice) while mixing the infused cream with our Brazilian 48% milk chocolate, unsalted butter, and a small amount of sugar. This is fabulous when dipped in dark chocolate and rolled in toasted hazelnuts!
Yup. You read right! We make our own marshmallows right here in house using again, only the best and freshest ingredients - Madagascan Bourbon Vanilla Beans, fresh egg whites, unflavored gelatin and sugar. Keeping it simple is why our marshmallows have been written up all across Canada! Try one dipped in dark chocolate and rolled in toasted coconut! MMMMMmmmm!
Our cream caramel is made in house with cream, butter, sugar and good ol' Rogers corn syrup, then poured into spherical molds while still hot. Once set, they may the perfect truffle center for being dipped in milk chocolate and toasted pecans!
