Our Limited Edition Chocolate


Every now and then when the moon and stars align perfectly, we come across a truly amazing cacau - something very different than anything we've sampled yet. In an ideal world it's a product that we would like to offer every day. However, there comes with it no guarantee of a sustainable supply. As a result we have no choice to offer it as a “Limited Edition”. We currently have 3 “Limited Edition” cacau's - an extremely rare Porcelana, and a rare Criollo from the infamous Ocumare district of Venezuela, and an even rarer, amazing criollo from a small plantation that has been producing cocoa since the 1700's in the neighboring district of Cuyagua Venezuela.

Porcelana

Porcelana – often considered the "Holy Grail" of chocolate - is the purest species of Criollo cocoa, and is grown in such small quantities that only 5 chocolatiers in the entire world have access to it, and even they cannot often get the quantities they would like. We are very fortunate to be able to offer you the ability try chocolate made of this amazing cocoa bean. The plantation from which the beans were originally acquired is located in the Tobasco district of Mexico, and is well known for making an effort to sustain the Porcelana cacau.

While most cocoa beans are typically a tan to dark brown as they ripen Porcelana received its name for the creamy white color of the cocoa beans. The flavor of the chocolate is just as delicate as the color. When first seeing the bar, you will think you've been mistakenly given a milk chocolate bar. The color is a light reddish brown. However it is in fact a dark chocolate.

The taste is just as unique as the look. When you first pop a piece in your mouth, you'll immediately note a taste like red wine, then as it melts the flavor changes to a very distinct smoky, date/raisin flavor, and finally ending with a long lasting, fruity chocolate flavor, with virtually no bitter after taste. You truly MUST try one of our bars made from these beans – even if it's to say that you've eaten some of the rarest chocolate in the world.

Ocumare

Located on the Venezuelan coast, the Ocumare district is one of the oldest and most famous chocolate producing regions in the world. They are famous for their delicate Criollo cacau, and as a result, the small amount they produce each year is in high demand, and is getting harder to acquire as North Americans become more discerning in their taste for chocolate.

Typical of a good Criollo, you will find the chocolate to be very rich in flavor, but lacking in significant bitterness and earthy tones. This chocolate has a very light nutty flavor with distinct fruity notes such as plum or cherry as you let it melt in your mouth.

Cuyagua

Located on the Venezuelan coast very close to the location of our Ocummare cacau, this remote village (accessible only by boat) has two plantations that have been producing fine quality criollo cacau since the 1700's. The farmers here work very hard to maintain the quality of their crops. Knowing this, and having sampled a small amount of Cuyagua beans over 3 years ago, we have worked diligently to be able to purchase more and in larger quantities. A few months ago the opportunity presented itself, and as a result we now have a limited amount of Cuyagua for sale!

Similar to the Ocumare, you will find the chocolate to also be very rich in flavor. However that's where the similarity ends. In it you will notice a different, richer, and somewhat spicier flavour, along with notes of honey. It is by far my personal favourite of all of the types of cacau I've sampled in the past few years.
